Chicken Methi




Chicken Methi is a unique dish prepared with fenugreek i.e methi seeds and kasuri methi. The nice aroma that emanates from the combo of methi seeds and kasuri methi makes this dish a pleasure to relish. Besides adding fragrance to a preparation, methi seeds also have a healthy side. Ingredients:

1 kg chicken

3 tbs yogurt

2 tsp ginger paste

2 tsp garlic paste

2 tsp turmeric powder

2 tsp coriander powder

2 tsp cumin powder

1 tsp chilli powder

6-7 green chillies (made into a paste)

1 medium sized onion (chopped)

1 medium sized tomato (chopped)

1/2 tsp methi seeds

2 tsp of kasuri methi

salt to taste

White oil for cooking

Method:

1) Marinate the chicken with yogurt, 1 tsp turmeric powder, 1 tsp coriander powder, 1 tsp cumin powder, 1 tsp chilli powder, 1 tsp ginger paste, 1 tsp garlic paste, salt and a little bit of oil. Refrigerate it for an hour.

2) Heat oil in a frying pan.  When oil turns smoking hot, add methi seeds. As the nice aroma of methi touches your nostril, add onion and tomatoes. Fry them till they become translucent. Add ginger & garlic paste. Saute for 1 minute. Then add 1 tsp turmeric powder,1 tsp coriander powder, 1 tsp cumin powder, salt and green chillies paste. Saute it for 1-2 minutes. Now add the chiken pieces along with the marinade. Simmer it on low heat covered with a lid for 15-20 minutes till oil separates and appears on the surface.

3) As oil becomes visible, put the kasuri methi in a bowl of hot water and pour it over the chicken. Cook covered till chicken is cooked through.

4) Serve chicken methi hot with rice.
