Spicy Raw Tomato Curry


Tomatoes are extremely good for health. It is a rich source of Vitamin E and a slew of minerals like Magnesium, Potassium, Copper and Phosphorus. The antioxidants present in tomatoes are scientifically found to be effective in battling against the growth of malignant tumors.




 Tomatoes are very low in calories and saturated fat. It is also believed to improve the health of skin and bone. Indisputably, tomato health drinks are fast getting popular worldwide. The recipe below is purely made from raw tomatoes. A perfect accompaniment of rice, it somewhat tastes like sour sweet tomato chutney.






Ingredients:                                        Cooking time: 20 minutes
ü  4 large raw tomatoes (cut into wedges)
ü  1 large potato (cut into wedges)
ü  5-6 green chillies (chopped)
ü  1 tsp dry red chilli powder
ü  1 tsp turmeric powder
ü  1 tsp panch phoron
ü  3 tbsp of sugar
ü  10-12 moong dal bodi
ü  Salt to taste
ü  Mustard oil for cooking
Method:
1) Heat oil in a pan. When oil turns piping hot, fry the bodis and then take them off the heat. Keep aside. Now add panch phoron into the same oil and allow them to crackle.
2) Then add the potatoes and shallow fry. Next add the raw tomatoes. Add green chillies, turmeric powder, dry red chilli powder, salt and sugar.
3) Pour 1/2 cup of water and cook covered till potatoes and tomatoes soften.
4) Mix in the fried bodis with the curry. Garnish with green chillies.
5) Serve hot with rice.
