Kolkata Egg Roll

I could not wait to finish the book "the Hunger Games", brimming with suspense and twists at every turn of the events, that I stayed up late for couple of nights just to complete the reading while the movie made on it generated an opposite reaction. I could not wait for the movie to end. It was so bad and pathetically warped out of storyline. Though I have always enjoyed reading books more than watching the movies based on them, no other movie proved to be this much disappointing. I was cursing myself to spoil the lingering impression of fulfillment that reading a good book leaves in mind by watching a thoroughly downgraded cinematic adaptation, poorly cast and directed both, that totally ruined the feel-good factor. I don't know why some people choose to make such hollow image of a great book. It's sheerly outrageous and unforgivable.

Back to the recipe, Kolkata Egg Roll is a very popular street food in Kolkata. All across Kolkata, there are roadside stalls almost at every junction possible selling egg rolls, chicken rolls and egg chicken rolls like hot cakes. Your visit to Kolkata remains incomplete without a dig into the rolls.

Ingredients :( 4 rolls)                                            Cooking time: 30 minutes
ü  1 cup wheat flour
ü  1 1/2 cup all-purpose flour
ü  4 eggs
ü  1 small red onion (chopped)
ü  Half of a cucumber (chopped)
ü  2-3 green chillies (chopped)
ü  Salt to taste
ü  Black pepper, taste wise
ü  Tomato sauce
ü  White oil for cooking
Method:
1) Mix in wheat flour, all-purpose flour, a bit of salt and 1 tsp oil. Rub in the mixture for few seconds using your fingers. Then slowly stream water into the mixture as required for kneading dough.
2) Make balls of medium size just as you make for chapatis out of the dough and then roll them out into circular shapes few inches bigger than the normal chapatis.
3) Roast them in oil. Meanwhile, agitate the eggs in a bowl with a spoon. Season with salt and black pepper.
4) Add a ladleful of the egg mixture into a non-stick pan. Immediately place one roasted chapati on top. The egg will stick to the chapati. Flip it over after few seconds. Repeat the steps with the remaining chapatis.

5) Now slip a rectangular paper beneath the chapati, arrange a layer of onion, cucumber and green chillies through the middle topped with a sprinkling of sauce and roll it up tucking the ends of the paper into the bottom.
6) Serve hot.
