Egg Avocado Sandwich

 
 

Sweet creamy avocado, aren’t they tasty? It is very recently upon coming down to US I have become
aware of a lot many usages of avocado in a variety of delicacies. Usually, avocado is ripened in
normal temperature for 3-4 days before being put to use. Ripe and overripe avocados are of creamy
texture, easily giving away under pressure of your fingers. In case the avocados are not ripe but you
need to use them immediately, you may boil the avocados in microwave for 5-8 minutes and then
crush them. Although over ripe avocados are tastier, but the ones softened through boiling also taste

good, at least I like them.




 
 
 
Ingredients:                                                        Preparation time: 5 minutes
ü  8 slices of bread
ü  4 eggs (hard boiled)
ü  1 avocado (ripened)
ü  2 tsp mayonnaise (optional)
ü  Salt to taste
ü  Black pepper taste wise
ü  Paprika, taste wise
ü  Butter, for spreading on bread
ü  4 lettuce leaves (blanched)
Method:
1) Spread butter on one side of the breads. In a mixing bowl, mash together eggs, avocado, mayonnaise, salt, black pepper and paprika.
2) Put a lettuce leaf on one slice topped with spoonful of the egg-avocado mixture and cover with another slice.
3) Cut the sandwich in half diagonally and serve.
