Chicken Guacamole Sandwich




Few weeks before I shared the recipe of guacamole and few days after that of Turkey Guacamole Wrap and few days later the recipe of Turkey Bacon Guacamole Sandwich. Yes it is true I am increasingly growing fond of guacamole. So here goes another lip-smacking mind-invigorating recipe of Chicken Guacamole Sandwich, one of the best sandwiches I have tasted so far. This sandwich is so good that you can actually consider serving it in restaurants. Seriously!!

 


Ingredients:                                                 Preparation time: 20 minutes

ü  1 chicken breast (boiled and shredded)

ü  2 tbsp mayonnaise

ü  8 slices of wheat bread

ü  1 ripe avocado (mashed)

ü  1 tomato (finely chopped)

ü  1/2 of a small size red onion (finely chopped)

ü  50 gm of cilantro or coriander leaves (chopped)

ü  2 tsp lemon juice

ü  4 lettuce leaves (blanched)

ü  Grated jack Colby cheese (as per your craving)

ü  Salt to taste

ü  Black pepper

Method:

1) First and foremost, make the guacamole by putting together avocado, tomato red onion, lemon juice, salt, black pepper and cilantro. Combine well and refrigerate for half an hour.

2) Meanwhile, toast the bread slices for few minutes until both sides are lightly browned. Mix chicken with mayonnaise.

3) Put a lettuce leaf upon one bread slice topped with guacamole, spoonful of chicken mayonnaise mixture and grated jack Colby cheese. Cover with another slice.

4) Eat and be happy.
